Simple Tray Baked Wiri Wiri Chicken Recipe

Serves 3-4

Ingredients:

  • 200g bottle of Wiri Wiri marinade

  • 500 - 700g chicken thighs (Bone-in, boneless or  skinless)

  • 1 tbsp olive oil (optional, for extra juiciness)

  • 1 tsp sea salt (to taste)

  • Juice of 1 lemon 


 

Instructions:


  • Wash Chicken in a bowl with water and the juice of the lemon (It’s a Guyanese Caribbean thing)

Marinate

  • In a bowl, mix the chicken thighs with the entire 200g bottle of Wiri Wiri marinade.

  • Add olive oil

  • Massage everything well to coat evenly.

  • Marinate for at least 1/2 hr (overnight is best for deep flavour).

Cook
Oven-Baked:

  • Preheat the oven to (150-170°C).

  • Place chicken on a lined baking tray.

  • Bake for 20 mins, flip 20 mins,flip again for 10 mins.

  • For extra char, grill for 2-3 mins at the end.


Grill/BBQ:

Preheat the grill to medium-high heat (150–170°C).

  • Grill chicken for 5-7 mins per side, basting with extra marinade.

  • Cook until charred and juicy, with an internal temp of 75°C.


Pan-Fried:

  • Heat a grill pan or frying pan over medium-high heat.

  • Add a little oil and cook 5-7 mins per side until golden and cooked through.

 

Serving Ideas:

Fries or Chunky chips
Turmeric rice
Wraps with and garlic sauce
Coleslaw
Mixed salad 


Elevation Tips

Take it up a level with adding..
1 tsp smoked paprika (enhances flavour)
½ tsp black pepper
1 tbsp honey or brown sugar (optional for a slight caramelised glaze)
